Carrot Spelt Cookies

Heat oven to 375 F.

3/4 cup of butter softened or 3/4 cup of margarine
1/2 cup of organic sugar or 3/4 cup of honey
1 & 1/2 teaspoon of vanilla
1 egg
1 cup of whole wheat flour
1 cup regular bleached flour
2 teaspoons of baking powder
1/2 teaspoon of salt
1 teaspoon cinnamon
1 cup spelt
1 & 1/4 cup of shredded carrot

Combine the butter, sugar, vanilla and egg in a bowl. Mix well.
Combine both the flours, baking powder, salt, cinnamon and spelt in another bowl. Mix well.

Pour the wet ingredients into the dry and mix until a loose dough is formed. Add the carrot and mix until dough completely combined.
Place tablespoons of dough on cookie sheet about 2 inches apart. Bake for 10-15 min.
